Recipe: Coconut Shrimp


Get ready for the perfect mix of sweet, savoury and spicy that will absolutely create a taste sensation that your mouth will have never experienced before. And we all know what you're thinking... deep frying in COCONUT OIL?! Well yes, it tastes awesome but it's a big luxury. Feel free to replace it with vegetable oil or something similar!


  • 500 g raw king prawns
  • 2 tsp chilli paste
  • 100 g panko breadcrumbs
  • 200 g desiccated coconut
  • 2 eggs
  • 1 bowl plain flour
  • 500 g coconut oil
  • 100 g mayonnaise
  • 50 g sweet chilli sauce
  • 1 lime

Step 1

Marinate The Prawns

Tip the prawns into a large bowl and add the chilli paste. Coat the prawns with the paste and leave to marinate in the fridge for an hour.

Step 2

Preheat The Oil

Preheat the coconut oil in a large saucepan half filled with oil to 180ºC.

Step 3

Bread The Prawns

Combine the breadcrumbs and coconut flakes. Beat the eggs. Toss the prawns in the flour, then coat in egg and toss in the coconut breadcrumb mixture.

Step 4

Fry The Prawns

Gently lower the prawns into the hot oil and cook for 5 minutes, until the breadcrumbs are browned and the prawns are cooked and hot through.

Step 5

Make The Mayo

Tip the mayo into a bowl and stir through the sweet chilli sauce. Zest the lime and add that plus a squeeze of the juice.

Step 6

Serve Up

Serve the hot prawns with the mayo. Serves 4 as a starter
