Pork And Prawn Dim Sum
Dim Sum is notoriously difficult to make, so what better recipe to give our Sorted twist than this. We asked you guys for help on Google+, Facebook, Instagram, Twitter and YouTube with this one and there were loads of suggestions! We make things easy by using wonton wrappers, then add a bit of texture with peanuts and water chestnuts...all your ideas!
- 150 g raw king prawns
- 150 g pork mince
- 1 clove of garlic, minced
- 1 chunk of ginger, grated
- 1 spring onion
- 2 water chestnuts
- 1 tbsp roasted chopped peanuts
- 2 tsp soy sauce
- 1 tsp sesame oil
- 2 tsp cornflour
- 20 wonton wrappers
- 1 carrot, very finely diced
- 1 tbsp toasted sesame seeds
- 200 ml soy sauce (dipping sauce)
- 1 tbsp brown sugar
- 1 red chilli
- 1 spring onion
Make The Paste
Chuck the prawns, mince, garlic, ginger, spring onion, soy sauce, sesame oil and cornflour into a food processor and pulse into a rough paste.
Add Other Fillings To Paste
Chop the water chestnuts and roasted peanuts as finely as possible and mix into the paste. Transfer the mixture into a bowl and cover it with clingfilm. Leave it in the fridge for 30 minutes.
Lay Out The Mixture
Lay out the wonton wrappers on a surface and place a heaped teaspoon of the mixture into the middle of each wrapper.
Fold The Wrapper Around Mix
Fold the edges up of the wrappers up around the mixture, leaving a hole in the top (brush the pastry with water if it struggles to stick). Cut away any excess wrapper.
Cook The Dim Sum
Boil a little water in a wok or saucepan. Sit your steamer over the water (You could also use a sieve over a deep saucepan).
Place a square of greaseproof paper into the steamer and add the dumplings. Put the lid on the steamer and cook for 10 minutes.
Make The Sauce
Add the soy sauce and the sugar to a small frying pan. Boil the liquid until reduced to a loose syrupy consistency.
Slice The Onion And Chilli
Slice the chilli and spring onion. Chuck them into the sauce and simmer for another minute.
Dice The Carrots
Dice the carrots very small.
Serve The Dim Sum
Scatter over the carrots and sesame seeds. Serve the dim sum with the sauce.
