Recipe: Cardamom Roasted Oranges With Coconut Ice Cream


Bet you've never thought to roast oranges before? Well this is the most refreshing, juicy, hot dessert out there and it's pretty healthy considering most of your 5 a day are in here. Hello vitamins! The sugar caramelizes the oranges amplifying them and causing an explosion of flavour with each bite. Make sure you top up each portion with a scoop of coconut ice cream- it's a must have.


  • 10 oranges
  • 75 g soft brown sugar
  • 2 tsp ground cardamom
  • 10 sprigs thyme
  • 10 dates
  • 50 g pomegranate seeds
  • 2 tbsp toasted coconut flakes
  • 10 scoops coconut ice cream

Preheat the oven to 200ºC.

Peel the oranges using a knife, cutting some of the skin off as well as the peel. Toss the oranges with the brown sugar and the cardamom to full coat them then place them into an ovenproof dish, packing them tightly.

Poke the thyme sprigs and the dates in any spaces left (if there’s no space them remove one orange to make room)! Cover the dish with foil. Roast the oranges for 30 minutes, until the sugar has started to caramelise. Take off the foil and raise the oven temperature to 220ºC. Roast for another 10 minutes.

Serve with Ice Cream!

Remove the oranges from the oven and scatter over the pomegranate seeds and coconut flakes. Serve 1 per portion with a scoop of ice cream. Serves 10
