For The Bananas
- 1 bananas
- 2 tbsp soft brown sugar
- 1 tbsp butter
For The Porridge
- 600 ml water
- 150 g porridge oats
- 2 tbsp almond flour
- 1 pinch salt
For The Chocolate Cream
- 50 g dark chocolate
- 150 ml double cream
For The Toppings
- 2 tbsp heather honey
- 2 tbsp almond flakes
- 1 tbsp toasted coconut flakes
Cook The Bananas
Peel and slice the banana. In a mixing bowl toss the slices with the brown sugar.
Melt the butter in a frying pan over a high heat. When it’s foaming add the banana slices and turn the heat down to medium. Fry for a few minutes until well caramelised, then repeat on the other side.
Make The Chocolate Cream
Melt the chocolate in a microwave, heating for 20 seconds at a time and stirring in between.
Whip the cream to soft peaks and fold in the chocolate.
Assemble And Serve
Transfer the porridge to two bowls and top with the banana slices. Spoon a scoop of the chocolate cream onto the porridge.
Drizzle over the honey and scatter over the almond and coconut flakes.
