Recipe: Caramelised Banana And Chocolate Porridge


Warning: This is not your everyday porridge. This is the kind of porridge a porridge lover would dig into on their birthday ...or on a real special occasion... or just when you've got a hangover. Up to you! We felt like porridge was getting overlooked so this recipe has been crafted with care and affection.


For The Bananas

  • 1 bananas
  • 2 tbsp soft brown sugar
  • 1 tbsp butter

For The Porridge

  • 600 ml water
  • 150 g porridge oats
  • 2 tbsp almond flour
  • 1 pinch salt

For The Chocolate Cream

  • 50 g dark chocolate
  • 150 ml double cream

For The Toppings

  • 2 tbsp heather honey
  • 2 tbsp almond flakes
  • 1 tbsp toasted coconut flakes
Cook the Bananas

Peel and slice the banana. In a mixing bowl toss the slices with the brown sugar. Melt the butter in a frying pan over a high heat. When it’s foaming add the banana slices and turn the heat down to medium. Fry for a few minutes until well caramelised, then repeat on the other side.

Melt the chocolate in a microwave, heating for 20 seconds at a time and stirring in between. Whip the cream to soft peaks and fold in the chocolate.

Transfer the porridge to two bowls and top with the banana slices. Spoon a scoop of the chocolate cream onto the porridge. Drizzle over the honey and scatter over the almond and coconut flakes. Serves 2
