Banana sandwiches take us zooming back to childhood. This recipe is something a little more special than what you were expecting because it involves a homemade blueberry compote AND caramel walnuts. Tip the blueberries, sugar and the rum into a small saucepan and cook over a medium heat for 5-10 minutes, until the blueberries break down into a thick compote. Set aside.
Tip the sugar into a small saucepan and pour in the water so that it just covers the sugar. Let it bubble, without stirring, until it turns a deep golden brown. Remove from the heat and add the walnuts. Coat using a fork (be careful, the caramel is very hot) and transfer to a plate or tray lined with greaseproof paper. Roughly chop the walnuts when they’ve cooled a little and set aside.
Mash the bananas and combine with the cinnamon and the walnuts in a bowl. Cut the bread into 4 thick slices. Butter both sides of each slice and spread the compote over the face up side of each slice. Pile the banana mix, split between two slices and sandwich with the other two slices, compote side down.
Heat the butter in a frying pan over a high heat until it’s foaming and beginning to turn brown. Add the sandwiches and fry for 2 minutes on each side. Makes 2 sandwiches
