Recipe: Okra Coconut Curry Vegan

OKRA COCONUT CURRY VEGAN

Quick and tadty. Serves 2

Ingredients

  • 300 g okra
  • 2 g shallots
  • 2 g spring onions
  • 2 g cloves of garlic
  • 1 g knob of ginger
  • 1 g red chili
  • 1 tsp mustard seeds
  • 1/2 tsp cumin
  • 1/2 tsp curcuma
  • 1/2 tsp fenugreek seeds
  • 5 g kaffir lime leaves
  • 1/2 g lime
  • 1 tbsp coconut oil
  • 2 tbsp dessicated coconut
  • 200 ml coconut milk
  • 2 tbsp parsley
  • 1 g pinch salt and pepper
use a wide pan

Step 1

Heat the oil and pop the seeds, add onions, garlic, ginger and chili and cook for 3 min.

Top and tail the okras and cut them into 1 inch pueces, add them and the kaffir leaves and cook 4 min. Add milk and a bit of water. Season and add curcuma and lime. Finish with parsley
