Recipe: Eggplant Apricot Nut Pilaf


fruits, seeds and nuts makes it tasty and healthy. Eat it with chicken. recipe for 3


  • 3/4 cup basmati rice
  • 3 cup chicken stock
  • 1 g cinnamon stick
  • 3 g cloves
  • 2 g bay leaves
  • 1/2 g large onion
  • 1 g eggplant
  • 10 g dried soft apricots
  • 4 g dried soft dates
  • 30 g whole shelled hazelnuts
  • 30 g roasted chickpeas
  • 50 g cashew nuts
  • 30 g golden linseed
  • 1 tbsp tomato paste
  • 1 g pinch salt and pepper
  • 2 tbsp olive oil
  • 3 g chicken thighs
  • 2 tbsp sweet beet syrup
  • 3 tbsp Bourbon
  • 1 g salt and pepper
  • 1 g bunch of parsley

Step 1

Chop onion and eggpalnt and start the onion in the olive oil, then add the eggplant, salt and pepper . Cook until light brown. Chop apricots and dates.


Step 2


nuts and seeds to the pot, then the rice, fruits and spices, stir well and add hot stock and tomato paste. Bring to a boil, reduce the heat very low and let it stock up the liquid until the rice is tender


Step 3


season the chicken with the spices, salt and pepper and in some oil fry them on both sides add the syrup and glaze them. Add the Bourbon and close the lid and let the chicken get done
