Recipe: Soufflé With Red Fruits Nr.500
A dish from the Picardie to celebrate my 500 th recipe on Sorted. The red fruits of Noyon are famous, read more on the blog.
- 4 g free range eggs
- 250 ml whole milk
- 40 g butter
- 1 tbsp flour
- 1 tbsp cornstarch
- 150 g red fruits raspberries, blackberries, red currants
- 5 tbsp icing sugar
Make The Base
melt 30 g butter in a pot, add flour and cornstarch. Loosen with milk a bit and a bit. Cool down
Seperate The Eggs
mix 100 g fruits in a blender, add the icing sugar and the egg yolks. beat the egg white to stiff peaks with a bit of salt, butter 4 small dishes and fold the fruit mix into the batter and pour 3/4 into the bowls. Place some whole fruits into the mix and place it into the oven for 25 - 30 min.
serve with blackberry limoncello ice cream and some fresh fruits
