Recipe: Chocolate Waffles

CHOCOLATE WAFFLES

Served with macerated Physalis. Makes 6 waffles.

Ingredients

  • 100 g unsalted butter
  • 2 g large free range eggs
  • 120 g coconut flower sugar
  • 1 g pi nch of salt
  • 200 g flour
  • 1 1/2 tsp cream of tartar
  • 1 1/2 tbsp cocoa
  • 100 g 76% chocolate
  • 75 ml milk
  • 120 ml cream
  • 75 g Physalis
  • 2 tbsp Spanish liqueur 43
  • 2 tbsp creme fraiche

Step 1

Start

melt the butter and cool it down, melt the chocolate in the milk in the microwave and cool it down. Separate the eggs. Quarter the fruit and pour 43 on top and set aside. Beat egg white half stiff and then add sugar and salt, beat again.

beat the egg yolk fluffy and add the butter. Mix flour, cocoa and cream of tartar and add it to the egg yolk mix, add the rest. Heat the waffle iron and brush it with oil once. Bake
