Recipe: Matcha Pancake

MATCHA PANCAKE

A Japanese Style fluffy pancake. Makes 2

Ingredients

  • 90 g flour
  • 3 tbsp sugar
  • 2 g large free range eggs
  • 1 g pinch of salt
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tbsp Matcha powder
  • 90 g buttermilk
  • 1 tbsp melted butter and some for the moulds
  • 1 tsp vanilla extract
  • 2 tbsp icing sugar
  • 2 tbsp Matcha
  • 1 1/2 tbsp warm water
  • 50 g blueberries
  • 1 tbsp icing sugar
use 2 servings rings 13 cm

Step 1

grease the moulds good with butter. Sieve flour, Matcha , baking powder and soda and salt. Use a large bowl and beat eggs and sugar until triple in size. Add melted butter and vanilla and the flour mix, fold in carefully.

Heat up the pan on high, transfer it on a wet cold towel and put it back on the heat on low. Pour in the batter and bake for 4 min with closed lid, turn and bake the other side.

Sauce

make the matcha sauce and sprinkle first iicing sugar on top then add the sauce. Serve with fresh fruits
