Puy Lentils W Ginger Turmeric Vegan

A spiced dish for cold days. Serves 3.
- 160 g Puy lentils
- 1 g bell pepper
- 1 g green pepperoni
- 1 g spring onion
- 1 g large potato
- 3 g cloves of garlic
- 30 g fresh ginger
- 1 tsp turmeric
- 1/2 tsp ground cumin
- 1 g pinch salt and pepper
- 1 g fresh thyme
- 1 tbsp veg stock powder
- 1 g hand full leafy greens
- 2 tbsp olive oil
- 1 g bay leaf
Saute first onion, garlic and ginger and add turmeric and cumin. Give it a minute more.
Add the veggies, stir, add bay leaf, thyme and water and the lentils. Add the pepper -but DO NOT ADD SALT OR STOCK

now you can add the salt and the veg stock and cook it until the lentils are to your taste. They will need up to 40 min. add the leafy greens and serve
