Recipe: Pave De Biscoito


When we were looking to create Brazilian desserts and saw images of this one... we couldn't ignore it. Layers of biscuit, chocolate butter cream, caramel and roasted peanuts... it is just heaven! We guess it's like the Brazil's answer to tiramisu... only perhaps even better!


  • 1 handful roasted peanuts
  • 100 g softened butter
  • 120 g caster sugar
  • 4 egg yolks
  • 1 tsp vanilla extract
  • 1 tbsp cocoa powder
  • 250 ml double cream
  • 1 packet rich tea biscuits
  • 398 g caramel

Step 1

Cream The Butter And Sugar

Cream the butter and sugar in a bowl until pale and fluffy. Tip in the egg yolks one at a time and beat together, then stir in the vanilla and cocoa.

Whip The Cream And Combine

Whip the cream slightly until you have soft peaks. Whisk the cream into the chocolate bowl but don’t overwork it otherwise it’ll split.

Line The Tin With Biscuits

Cover the base of your loose-bottomed cake tin with a single layer of the biscuits. Arrange the biscuits around the edge of the tin too, decorative side facing out.

Pour in half the chocolate mixture. Create another layer of biscuits, then add the rest of the cream.

Add The Caramel

Finish with a third layer of biscuit before spreading a layer of the caramel (which is easier to spread if you beat it in a bowl first).

Scatter The Peanuts

Blitz the peanuts into a fine crumb in a small food processor or crush in a tea towel. Scatter over the top and then leave the dessert to set in the fridge for at least 4 hours although overnight is better.

Slice to serve with a drizzle of cream. Serves 8
