Recipe: Fortune Cookies

FORTUNE COOKIES

With Chinese New Year and the year of the Horse on the approach we thought we'd celebrate with some bespoke fortunes wrapped up in deliciously crispy and sweet cookies. Our idiot proof recipe to making awesome fortune cookies means you can create them at home with family and friends and not just in chinese restaurants.

Ingredients

  • 100 g plain flour
  • 150 g icing sugar
  • 125 g egg whites
  • 60 g melted butter
  • ½ tsp Chinese five spice
preheat the oven

Preheat The Oven

Preheat the oven to 180°C.

Stir dry ingredients

Stir Dry Ingredients

Stir the dry ingredients together.

Add remaining ingredients

Add Remaining Ingredients

Beat in the egg whites and melted butter. Sprinkle in the Chinese five spice and mix well.

Bake

Spread circles 10cm across onto a silicon mate, keeping them as thin and even as possible. Bake for 5 minutes whilst you make your messages to go inside.

Remove From Oven

Remove the flat cookies from the oven and immediately place a message into the centre of each, fold them in half and half again whilst still hot (take care) and leave to cool and go crispy.

Serve up the personal messages to your friends to crack in to. Makes 24

Btw even if yiu dont have the silicon mate just use greasproof paper and they turn out amazingly!

I attempted to make cookies, but failed. I took that faliure and turned it into cookie crumble that you can use ontop of icecream, oatmeal,pancakes, anything you desire. On top of all this, it is HEALTHY. Yes, it is a treat but you can eat it with almost no guilt!
