Recipe: Red Velvet Smore Cake
This cake sings of fusion - red Velvet for aesthetics, s'mores for warm summer nights around campfires. Serve, and enjoy.
- 1 tsp cocoa powder
- 1 tbsp cocoa powder
- ¼ cup applesauce
- ⅓ cup flour
- 2 tbsp (soy) milk
- 1 tbsp maple syrup
- 2 marshmallows
- ⅓ tsp baking powder
- a few drops of red food dye
- 1 egg
- 1 tbsp maple syrup / other sweetener
Preheat oven to 180c. Grease 2 medium sized ramekins.
Soft dry ingredients together, excluding marshmallows, 1 tbsp cocoa and 1 tbsp maple syrup.
Stir in wet, then pour into ramekins in equal amounts.
Bake for 20 mins.
Remove cakes, cut the marshmallows into approx. 1 cm cubes. Lay out on one cake, and let it broil in the oven for about 30 seconds. Keep an eye out.
Mix remaining cocoa powder and maple syrup. Drizzle over cake with marshmallows, place the other cake on it and press gently. Top with yogurt, if wished. Serve and enjoy.
