If you want pancakes for breakfast but you're not in a kitchen then you can still win! A little bit of prep before you leave home and you can have fresh pancakes made in minutes! Our little cheat of incorporating milk powder into the pancake mix means you only have to add eggs and water from outside camping!
Weigh out the flour, salt, ground cinnamon, sugar, milk powder and baking powder and mix them together in a food bag or glass jar. This bit you can do at home, way ahead of time, and take with you.
Crack the eggs into the dry mixture in the jar and pour in the water once your campfire or stove is ready. Shake and mix well to get rid of any lumps.
Heat a non-stick frying pan over a fire and stove and pour in a little oil. Pour the pancake batter into the pan when the temperature is steady and cook spread the batter pretty thin.
Flip the pancakes once cooked on one side and leave for another minute on the other. Keep the cooked pancakes warm in a tray whilst you cook more and use this opportunity to start to warm the fresh berries in the tray too. Serve these pancakes in a generous stack with a drizzle of honey and some fresh berries... we foraged ours!
