Recipe: Mango Agua Fresca


Whilst we were in LA we drank a variety of agua fresca drinks on our hunt for tacos. Watermelon, apple and cucumber and mango were all popular ones. When I picked fresh mangos from the groves at Lyons Farm and fresh mint with Gabriele at Paradise Farms Organic I thought what better way to use them up than with this drink...


  • 200 g caster sugar
  • 200 ml water
  • 1 handful of fresh mint leaves
  • 3 ripe magos
  • 2 limes
  • lots of ice (to serve)
Make the sugar syrup

Step 1

Make The Sugar Syrup

Dump the sugar, mint leaves and water into a saucepan and heat to a boil. Gently simmer for 2 minutes, then leave to cool.

Prep the fruit

Peel and dice the mangos. If it's an awesome mango then don't forget to suck the stone so you don't waste any flesh!


Step 3


Add the fruit to a liquidiser with 1 litre of cold water. Blitz until smooth, then pass through a fine sieve to remove any pith (this will depend on what fruit you use).

Adjust to taste

Whisk in as much of the cooled mint sugar syrup and fresh lime juice as you prefer… adjust to taste.


Step 5


Serve over ice.
