Recipe: Sriracha Prawn And Avocado On Toast

Marinate The Prawns
Mix the siracha and groundnut oil for the prawns. Add the prawns and marinate for an hour.
Grill The Avocados
Get a griddle pan really hot.
Slice the avocados in half, take the stone out and scoop the flesh out (keeping the halves whole).
Drizzle olive oil over the avocados, season with salt and pepper and lightly press them onto the griddle. Cook for a few minutes, then turn 90º. Cook until you have dark grill marks in a crosshatch.
Turn the avocados over and repeat, then remove from the pan and chuck them into a large bowl.
Make The Guacamole
Add the 3tbsp of olive oil, a generous squeeze of lime and most of the chilli (saving some for garnish).
Grill The Bread And Prawns
Drizzle olive oil over the slices of bread, and press into the hot griddle pan. Grill mark in the same way as the avocados, until crisp.
Keep the griddle pan hot and tip in the prawns. Cook for 3-4 minutes on each side, until they caramelise, blacken and cook through.
Finish And Serve Up!
Thinly slice the radishes and chop the coriander.
Spread the avocado over the toast and top with the hot prawns. Garnish with radish slices, coriander and diced red chilli.
