20 g unsalted butter

1 ea brown onion

2 cloves garlic

500 g beef mince

2 tbsp dried panko breadcrumbs

2 tsp curry powder

1 tsp ground cumin

1 tsp mild chilli powder

1 tsp ground cinnamon

1 ea granny smith apple

1 tbsp mango chutney

1 tbsp cider vinegar

2 ea large eggs

200 ml whole milk

2 heads little gem lettuce

1 tbsp olive oil

1 ea lemon

Method

1. Preheat the oven

Preheat your oven to 220°C. In a large frying pan, melt 20g of butter over a medium heat.

2. Chop chop!

Peel and finely chop 1 onion and 2 cloves of garlic. Tip them into the pan along with a pinch of salt and gently cook for 5-6 minutes until they become soft and translucent.

3. Brown the beef

Add 500g of minced beef to the pan and cook for 3-4 minutes, until browned. Break it apart with a spoon as it cooks

‍4. Spice it up!

Sprinkle in 2 tbsp of panko breadcrumbs, 2 tsp of curry powder, 1 tsp of cumin powder, 1 tsp of chilli powder, 1 tsp of cinnamon powder and a generous grind of black pepper over the meat. Stir well to combine, allowing the spices to coat the meat evenly.

5. Sweeten it up!

Coarsely grate 1 apple around its core and add it to the pan with the meat mixture, along with 1tbsp of mango chutney and 1 tbsp of cider vinegar. Cook for an additional 3-4 minutes, allowing theflavours to meld.

6. Prepare the custard topping

In a medium mixing bowl, beat 2 eggs, 200ml of milk and a pinch of salt and pepper until smooth.

7. Pour the custard over the meat

Level the meat mixture out until flat, then pour the custard mixture over the meat. Ensure it covers the entire surface.

8. Bake!

Place the pan into the preheated oven and bake for approximately 10-15 minutes, or until the custard is set and golden brown on top.

9. Salad Time

Cut the root from 2 heads of gem lettuce. Shred the lettuce and place into a large bowl. Drizzle over1 tbsp olive oil and the zest and juice of 1 lemon. Toss together and set aside, ready to serve.

10. Serve!

Remove the Bobotie from the oven and let it rest for a few minutes before serving. Take the whole pan to the table and serve alongside the salad. Enjoy!
